brewing filter cacao with chemex

NOT RECOMMENDED FOR CARIBBEAN ORIGIN

Our brew guides serve as a good way to start. Do play with them. We decrease water temperature, because cacao (even light roasts) benefits from it. It creates a more 'open' cup and a better flow.

Our ground cacao mostly requires a longer brew than typically for coffee. Don't compare to much, explore. For some methods we might suggest to add a metal filter*. Your brewed cacao will benefit from it.

This is a slow brew recipe inspired by Brodie Vissers & European Coffee Trip.


. 30g of ground cacao
. 480g of water
. 82-87°C
. 03:30 pouring process
. 07:30 total brew time

_ prewet & preheat filter and decanter
   (may be done using hotter water)
add the metal filter* (see below)
_ add and level the cacao grounds
_ tare scale

00:00 _ pour 60 grams of water onto the cacao . swirl to saturate all . allow to bloom for 30 seconds

00:30 _ add 140 grams in about 15sec to total 200 grams . circular motion from center to outside

01:30 _ add 200 grams in about 30sec to total 400 grams . circular motion from center to outside

02:30 _ lift the filter up slightly (using both hands) to break vacuum seal . hold for 15-20 seconds

03:00 _ pour last 80 grams of water to total 480 grams . use a spoon to gently knock off floating cacao

04:30 _ lift the filter up slightly (using both hands) to break vacuum seal . hold for 15-20 seconds

06:30 _ lift the filter up slightly (using both hands) to break vacuum seal . hold for 15-20 seconds

07:30 _ end of brew process . remove filter

You should end up with approx 300 - 350 ml of slow brew cacao. 350 - 380 ml adding the metal filter to the brew process.

 

* to add, or not to add, a metal filter

Some of our pour over and auto drip brew guides work both with and without the addition of a metal filter in your paper filter (paper below, metal on top that is).

Adding the metal filter will assist in a lower water resistance, resulting in a shorter brew time and/or higher yield.
Using only a paper filter will increase the TDS, but will result in a lower yield within the same brew time. You could however play with bypasses according to your preference.

For v60 and chemex we like to use the Kinto SCS Filter 4 cups. For the Moccamaster and other autodrip coffee makers we use Westmark Permanent Coffee Filter, size04.
